Cod with Organic Sweet Chilli Butter Beans & Rosemary
(Serves 4)

This makes a super quick lunch time snack for vegetarians and meat eaters alike.

Neapoletana sauce is a convenient ready made rich tomato sauce made with extra virgin olive oil and fresh basil. Otherwise substitute Neapoletana sauce for two cans of organic chopped tomatoes, 1 tbls of extra virgin olive oil and a small handful of fresh basil and puree them together in a liquidiser.


Equipment & Ingredients

4 medium sized pieces of fresh cod
2-3 tbls olive oil for shallow frying
Sea salt and freshly ground black pepper

2 small organic onions, sliced
2 tbls olive oil
4 sprigs fresh rosemary
two 350g/ 12fluoz cartons of fresh Neapoletana sauce, (or see intro)
3-4 tsps medium hot chilli sauce
3 tbls Whitworths organic granulated sugar two
400g/.. cans organic butter beans
Sea salt and freshly ground black pepper


Method

Fry the cod in the oil until both sides are lightly golden and it is cooked through. Remove carefully from the pan, and keep covered in foil in a low oven. Meanwhile Add the olive oil to a medium sized frying pan and add the onions and rosemary. Cook over a low to medium heat stirring occasionally until lightly golden. Mix in the Neapoletana sauce and chilli sauce and cook for 5 minutes until the red juices has has slightly thickened. Stir through the beans and leave the mixture to cook gently for a further 4 - 5 minutes. It is important that the beans keep their shape, so remove the mixture a little earlier from the heat if any of the beans start to pulp slightly.

Place the cod into 4 shallow individual warmed serving dishes and spoon over the hot beans. Serve straight away with a fresh salad like the one below and grilled ciabatta or hot garlic bread.

Tomato Salad in a Sweet Lemon & Basil Dressing


Equipment & Ingredients

4 tomatoes
Juice of ½ fresh lemon
1 tbls Whitworths organic granulated sugar
10 fresh basil leaves, lightly torn
Sea salt ground and freshly ground black pepper
2 tbls extra virgin olive oil


Method

Mix the tomatoes lemon juice sugar and fresh basil together in a serving bowl and season to taste. Add a light drizzle of extra virgin olive oil before serving


Tip

Sugar adds sweet edge to the naturally acidic flavour of tomatoes. I also add sugar to a simple fresh tomato salad above. Tomatoes are very rich in vitamin C and are health giving during the winter months if you serve them with filling foods like shepherds pie and hot meat or fish pasta dishes.
