Quick Chocolate Spice cake
Ingredients
4 ozs margarine
7 ozs caster sugar
2 ozs plain chocolate
2 eggs (separate yolks and whites)
1/2 a teaspoon of salt
½ a teaspoon of cinnamon
½ a teaspoon of mixed spice
½ a teaspoon of ground cloves
6 ozs of self-raising flour
8 tablespoons of milk
2 teaspoons of mixed peel
Method
Cream the margarine and sugar until fluffy.
Blend in the melted chocolate and the egg yolks.
Mix the salt and spices with the flour and stir in with the milk.
Fold in the stiffly beaten egg white.
Place the mix on greased paper in an 8 inch cake tin.
Bake in a moderate oven (325/350F) or gas mark 3-4 fro 45 minutes.
When cool spread with chocolate butter icing.
Tip
You can leave out the spices and peel and just have a very special chocolate
cake.
