Quick Chocolate Spice cake

Ingredients

  • 4 ozs margarine
  • 7 ozs caster sugar
  • 2 ozs plain chocolate
  • 2 eggs (separate yolks and whites)
  • 1/2 a teaspoon of salt
  • ½ a teaspoon of cinnamon
  • ½ a teaspoon of mixed spice
  • ½ a teaspoon of ground cloves
  • 6 ozs of self-raising flour
  • 8 tablespoons of milk
  • 2 teaspoons of mixed peel

    Method

  • Cream the margarine and sugar until fluffy.
  • Blend in the melted chocolate and the egg yolks.
  • Mix the salt and spices with the flour and stir in with the milk.
  • Fold in the stiffly beaten egg white.
  • Place the mix on greased paper in an 8 inch cake tin.
  • Bake in a moderate oven (325/350F) or gas mark 3-4 fro 45 minutes.
  • When cool spread with chocolate butter icing.


    Tip

    You can leave out the spices and peel and just have a very special chocolate cake.
